First up in the Lasagna project is
Roasted Squash Lasagna w/Leeks & Sage
Starting off with a quick veggie Lasagna. This did require me to make a Béchamel sauce, which I did succeed at. (I had been scarred by some pretty bad failures back in the day with this and had run from Béchamel containing recipes now for like a couple of decades.) Overall it was pretty quick I think ~ 2.5 hours from when I started peeling a squash til we were eating it, and an hour of that was just waiting.
Variation ideas: Could be an interesting base for other vegetables (roast broccoli? a can of tomatoes? Make a spicy/curry Béchamel?)
