 Twentieth up in the Lasagna project is

Accidentally Vegan Sweet Corn & Scallion Lasagna


This is a very light and tasty veggie lasagna. It's also a great one to highlight the texture and taste of fresh pasta sheets.  A nice contrast to some of the very rich recipes in the book.


I've gotten pretty good at making pasta sheets by now, rarely needing to call over Megan for moral support when something looks awry.


I've never made a corn chowder before but I've been informed the process here, cut the corn off, "milk" the cob, boil the cobs is a similar process.


The layering of the scallions and corn in the pan is quite pretty.


You also get to make some sides of tomatoes and basil that then get served atop a slice.
