Spanakopita
Spanikopita!
Apparently Spanikopita is a fillo dough stuffed with spinach and feta.
And not a holiday celebrated in Greece:
As a recipe, finally Paul served up something without any mistakes that I found. Also this recipe is Fun! I've already made it again mixing up the fillings with some vegetables I had on hand.
When feeding the dough through the pasta machine if you resist a little this will help pull it out longer and make it easier to get the full length to get the nice big spiral you want to have.
Only one ingredient discovery issue, the instructions have "tzatziki seasoning," I couldn't find that but I found something that worked great:
One accidental tweak was I apparently didn't buy enough spinach (900grams of spinach is a surprisingly large amount, like 4 of the "standard" bundles sold around here) so I bulked it up with some collard greens we had in the fridge.

Then make the Filo! Stretching this out slowly and carefully was fun and went fairly quickly. As mentioned above best to resist the pasta machine just a little to make it easier to get the full length.

This is a pic of the second one I made later, filling is half squash/spinach and has tomato paste added to the onions/garlic step. I'm likely going to do a "lasagna spanakopita" some day soon.
