The first venture into the "Classics" chapter.
I've been making the "simmer for 4-5 hours" tomato sauce for the past year from the Joy Of Cooking '94 edition so this Sunday Gravy was comparatively easy. The resulting sauce was lighter and more liquid which I think works well in lasagna. Overall seems like a much better ratios of sauce/cheese/meat/noodles. And a bit faster.
Also you only end up using half of the Sunday sauce (both the sauce and the meat) so this is ideal for having people over. I made the sauce and assembled the lasagna the night before, and we played board games (Root is awesome) while it baked.
